For a natural-born hostess like Valerie Rice, putting together a menu for any party is a cinch. Based in Santa Barbara, Calif., Rice has a reputation for being quite the entertain extraordinaire on topics from gardening to cooking to party planning — all down to the last detail. Creating the ideal menu for Father’s Day, however, is a task that has to be done perfectly — no one wants an unhappy father on their special day.

Luckily for us, Rice's focus is fresh and fun, while keeping things sophisticated but rarely formal and never fussy — something we think Dad will appreciate. A simple, manly meal that will leave him happy and satisfied is perfect for Father's Day.

My husband is a no muss, no fuss kind of guy. On Father’s Day I like to prepare a simple, flavorful meal that still feels like a special occasion — this menu is infused with fresh Mediterranean influences that make for a delicious, satisfying dinner that showcases the best of what’s in season.

When setting the table, think with a man in mind. Don’t get too fussy; it can feel special and elegant in a simple way. It’s June and the weather is lovely, so if you have the space, set a table outside simply: forgo a tablecloth, add a couple of large hurricanes with ivory unscented candles, heavy-duty rattan chargers, classic stemware, and a killer bottle of wine. You have set the scene to make him very happy.

A rack of lamb is a treat in our household. This special occasion protein is easy to make and delicious with an earthy red wine.

Rösti potatoes is a traditional Swiss dish, which takes coarsely grated potatoes and pan-fries them to crispy perfection. This is a total treat for Dad — a wedge of these on his plate will be a hit, trust me.

This whipped feta sauce is lip-smacking good and takes minutes to make. It adds great zest to the sweetness of beautifully grilled eggplants. This sauce will work well with all that’s on the plate. (I have yet to serve this without someone asking for the recipe!)

And the finale? A gorgeous, decadent mud pie.

If you’re looking for Father’s Day poems for kids to give to Dad this year, the go-to gal is the late Helen Steiner Rice. This poem is perfect. I think it would be fun to have the kids take turns reading it aloud to him, or memorize it and perform it. My kids love to do that kind of thing, and that would make it something special. Below, I have lots of great ideas on how to use this poem with your kids.

Performing this poem: Kids can use a few props and easily perform this poem for dad. Here are some fun ideas:

  • Stanza 1: Use a shaker, a tambourine, or a recorder to end this stanza on a musical note.
  • Stanza 2: Hold a few dollar bills in one hand, bandages in the other.
  • Stanza 3: Hold a football, baseball, soccer ball (Dad’s favorite).
  • Stanza 4: With a handkerchief/tissue, daub at eyes as though tearful when saying, “this thing we call emotion.”
  • Stanzas 5-6: Cut a big heart from a piece of red poster board.
  • Stanzas 7-8: Gather children to say this together. As they finish up the poem, they can unroll a sign that says, “Happy Father’s Day!”

Instant Pot Adventures #4 – Spinach Rice

My son and daughter-in-law were coming to visit on Sunday, and it was a perfect time for me to fix something vegetarian for them. I had planned on making taco soup, but my taco and ranch seasonings that I know I bought recently were nowhere to be found. After having a mini-meltdown, I searched my Pinterest folders to see what I had stashed. I came across this recipe for spinach rice, and thought it sounded great.

Of course, I never follow directions exactly, and jazz it up with my own flair. This was originally an Indian dish, but as I didn’t have garam masala powder or turmeric, I just used what I had (I used white rice instead. I know, I know!). I also added black beans and corn. I didn’t have any baby spinach, but I did have a can of seasoned spinach. I made it more of a Spanish flavor. Next time, I’m going to add some crushed or diced tomatoes and tomato sauce.

So, they come in hungry! YAY! I told them I had rice in the IP, and neither sounded thrilled. They thought I had plain rice. Oh no, my young whippersnapper! When I showed my son, he was surprised, and not in a good way. *le sigh*

Well, neither of them wanted it. She is a picky eater and, after looking at it, said ever so politely, “no thank you, I’ll just get a sandwich from the store.” Ummm, *sniffs* whatever! My son ended up getting Burger King for them. Sincere apologies to Soniya Saluja. I did eat it, and it was GREAT! I then proceeded to use my vacuum sealer and bag up 14 1/2-cup servings to put in the freezer. After plugging all the ingredients into the WW calculator, it gave me 4 points per serving .

On Monday, hubby and I went to Aldi’s. We hadn’t taken anything out to eat for dinner, so I decided on stuffed peppers! No need to cook rice, as I have a freezer full!

Final grade – A! I loved it. While hubby and son wouldn’t eat it alone (as they are meat and potato guys, even though they will try just about anything I make), they will eat it with other food. as you will see with the stuffed peppers!


Global BBQ Techniques for Epic Dishes

Asado

South American barbecue is some of the best in the world. Experiment with new techniques to bring fathers something out of the ordinary.

Origin: Argentina, Brazil, Chile, Paraguay, and Uruguay

Meats: Beef (flank steak), chicken and chivito (young goat) are most common, but Pork and Patagonian lamb are becoming more popular.

Method: Meat is cooked on a grill called a parrilla or on an open fire. Often a side of ribs is skewered on a metal frame called an asador and roasted by placing it next to a slow burning fire

Complements: Asado is perfect with red wines and simple salads made with just tomatoes and lettuce dressed with oil and salt. In Paraguay, chipa guasu, sopa paraguaya and manioc are served as side dishes. In Argentina, traditional accompanying dishes include offal, entrails, chinchulines and tripa gorda, mollejas (sweet bread), morcilla (blood sausage) and chorizo.

Brazilian Tradition:
Father’s day is known as Dia dos Pais. Families throw large, all-you-can-eat barbecues either at home or at a churrascaria (a Brazilian steakhouse). Dads are treated to the most prized cut of meat in Brazil which is roll-cut pieces of beef with garlic and olive oil cooked in rock salt.

Treat dads to some truly unique, up-and-coming African flavours.

Origin:
South Africa, Botswana, Namibia, Lesotho, Swaziland, and Zambia

Meats: See if you can source boerewors, sosaties and kebabs, but chicken, pork and lamb chops, steaks, sausages, heavy with coriander and bay leaves will also do fine. Basically African grilling relies on the whole kitchen sink of meats. In coastal areas they even include seafood.

Method: Historically wood was used, but charcoal has become the standard.

Complements: Pap (porridge) is traditionally eaten with the meat. Make pap from corn/maize serve with tomato and onion sauce or a more spicy chakalaka sauce. Have you heard of monkey gland sauce? Don’t let the name throw you off, it has nothing to do with monkeys. It’s a traditional tabletop condiment in South Africa. The sweet and spicy flavour is perfect with grilled meats, and the name really gets guests’ attention.

Father’s Day Dish Idea: Grilled prawns peri-peri with grilled corn salad, basil, and feta.

Char Siu

Dads will love pork prepared in this traditional Asian method. It’s slightly sweet with an amazing spice blend.

Origin:
China, Japan, Southeast Asia

Method: Long strips of pork are seasoned with a mixture of honey, five-spice powder, hóngfǔrǔ (fermented bean curd), dark soy sauce, and hoisin sauce.

Complements: Traditional starches such as rice, rice or buckwheat noodles, or Asian buns.

Father’s Day Dish Idea: Consider a char siu “BLT” served on a steamed bun as an introductory fusion dish.

Satay

Sweet, spicy, nutty. What’s not to love?

Origin: Indonesia, Malaysia, Singapore, Brunei, Thailand, Philippines

Meats: Diced or sliced chicken, goat, mutton, beef, pork fish or tofu

Method: Authentic methods use skewers from the midrib of the coconut palm frond, although bamboo is often used (and probably easier to find). The meat is grilled over a wood or charcoal fire, then served with various spicy seasonings. Various spices can be used in marinating the meat, but turmeric is always necessary and gives the meat its distinct bright yellow colour.

Complements: Satay is best served with a combination of soy and peanut sauce. They’re traditionally served with savory rice cakes called ketupat.

Father’s Day Dish Idea: Try peanut butter and soy glazed chicken kabobs or Thai skewered beef seasoned with ginger, garlic, and chilies.

Tandoori

Indian food is hot now. And if dad likes spicy dishes, this is a great choice. Be sure to accommodate less adventurous guests by letting them pick the spice level .

Method: Marinate chicken in yogurt with tandoori masala (a spice mixture of cayenne pepper, red chili powder and Kashmiri red chili powder). It is traditionally cooked at high temperatures on a skewer in a heated clay oven known as the Tandoor.

Complements: Tandoori chicken is mostly eaten as starter, but it can also be enjoyed as a main course. Serve with naan or other flatbreads to dip in the sauce and rice.

Father’s Day Dish Idea: For a mashup/fusion dish, try tandoori chicken tacos with red onions, corn and cilantro. This is very similar to how people eat in India. Onions and cilantro are served as condiments, and people go crazy for corn. They even put it on pizza.

Kabab

Middle eastern flavours are all the rage, and kababs represent the region very well.

Origin: Iran, Iraq, Afghanistan, Turkey

Meat:
Ground lamb and/or beef

Method: Mince the meat twice for a finer consistency, then mix with parsley or onion. Add salt, garlic powder, black pepper, celery powder, sumac, onion and one egg yolk. Mix all ingredients, cover and marinate in the fridge for at least 4 hours. Grill the slices on skewers over hot coal for an authentic, smoky flavour.

Complements: Try an Iranian rice pilaf with oil, salt and saffron, grilled tomatoes and onions and polow (middle eastern bread).

Father’s Day Dish Idea:
Serve up traditional lamb kebabs with Persian lime and sumac sauce.

Horno

Consider using one of these adobe ovens for truly authentic dishes.

Origin:
Mexico although now widely popular in North America

Meat: It varies based on the region of Mexico, but beef, chicken, goat, and pork are the most common.

Method: Grilled marinated cuts of meat (carne asada) on an open charcoal flame.

Complements: The standard tortillas, green peppers, onions and chili peppers are perfect when cooked in this most authentic method.

Father’s Day Dish Ideas:
Skewered beef or chicken with caldo and lime marinade.

Ikan Bakar/Ayam Bakar

The translation for “ikan bakar” is essentially “burned fish,” although poultry is also a popular protein with this grilling method.

Origin: Indonesia and Malaysia

Meat: Mainly grilled fish, stingray or chicken

Method: The meats are marinated with mixture of spices, pastes and sometimes a sweet soy sauce and then grilled. Garlic and shallots are quite prevalent in the sauces and spice mixes. Some dishes call for the meats to be wrapped in a banana leaf before grilling. This technique captures the steam and makes the meat even more tender.

Complements:
The meats are usually served with sambal belacan (chili with shrimp paste) or sambai kecap (sliced chili and shallot in sweet soy sauce) as a dipping sauce.

What to Serve It With

There’s a large variety of side dishes that will go with this dish.

Most often Mujadara is served with yogurt and a simple shepard salad to go along with the fried onions.

However, you can chop and change the salad how you like.

Whatever salad you choose, I recommend a citrus vinaigrette to really compliment the flavors in the Mujadara.

Vegetables are a great pairing for this dish as well.

You really have your choice of vegetable on the side if you feel like including one.

Things like asparagus, green beans or even carrots cooked in butter will be perfect matches.

I would avoid adding sides such as bread or potatoes, as the lentils and rice are quite heavy already.

You can make these ahead and store in an airtight container for up to 4 days.

Put them in a baking pan and cover with foil and reheat in a 350˚F (176˚C) oven until warmed through to the center.
