RECIPE PREPARATION Sleep with baked vegetables:


  • I washed the sleeping pieces, wiped them well with a kitchen napkin, then sprinkled them with salt, pepper, spices and left them to cool, while I cut the vegetables.

  • I cut the peppers, carrots and lemons into rounds, and I left the tomatoes whole.

  • I fried the fish in an oil-free pan for 2 minutes on each side, then I put them in an oven dish with vegetables and a cup of water.

  • I left it for about 30 minutes, then I added the chopped garlic and the parsley and I left it in the oven for another 2-3 minutes.


Sleep in the oven, on a bed of vegetables

We cut the head and put it aside (I washed it, put it in the bag with the tail and in the freezer for a soup, another time). We clean the fish of intestines and wings, wash well under a stream of cold water and cut it into rounds, thick of approx. 1cm. We wash them well and let them drain in a strainer.
Peel the vegetables and cut them into thin slices (2-3mm), including the garlic, and mix well.
We take a large, roasting pan, add a little oil (about half the amount), put the vegetables, spread them all over the surface and add the hot peppers.
We salted the salmon slices, peppered them and powdered them with paprika, then placed them in the tray over the vegetables.
We wash and chop the parsley and dill, and we keep the sage branches whole. Place the sage on the middle and sides of the tray, sprinkle with half the amount of chopped greens, put the bay and cherry tomatoes, sprinkle everything with the remaining oil, add water and wine and put everything in the oven on low heat for 20-30 ', check to be cooked vegetables but not very cooked! add the olives and let it simmer for another 5-10 'to brown the fish.

  • two large eggplants
  • 500 g chopped chicken breast
  • 50 g long grain rice
  • two red onions
  • 4 tomatoes

  • thyme
  • salt

  • a head of garlic
  • 3-4 tablespoons olive oil
  • Parmesan
  • a tablespoon of vegetable concentrate.

Method of preparation

Wash and peel the eggplant. Sprinkle with salt and remove some of the core so that it can be filled. Sprinkle the eggplant halves with olive oil and put in the oven to brown.

Separately, cut the red onion into scales, peel the garlic and finely chop. The donut is unwrapped and cut into thin slices. All put in a little oil to harden. Chop the chicken breast larger and mix with the onion, garlic and hardened donut, add the rice, season with salt, pepper, thyme, rosemary and vegetable concentrate and cook for about 30 minutes. Leave to cool for a few minutes.

The baked aubergines are filled with minced meat and put in the oven. Scald the tomatoes, crush with a blender and add to the eggplant tray. Serve hot and garnish with Parmesan cheese and sprigs of thyme and rosemary.
