Homemade apple cider vinegar

Today we will see how to prepare homemade apple cider vinegar, reusing apple scraps.
A few days ago I bought two kilos of apples on offer at the local market. The problem was consuming all that fruit before it spoiled. As happens whenever I have a doubt, in the afternoon I made a phone call to my grandmother, who suggested that I prepare the applesauce and vinegar using the scraps.
Therefore, I advise you not to waste cores and peels because you can make excellent vinegar at no cost from apple scraps. In my case, as you can see from the photos, I decided not to put the peels because I wasn't sure if they were organic, so I didn't trust them, but you can use them too.

If you are not a lover of apple cider vinegar it doesn't matter, because it can be used in many different ways: in the washing machine instead of softener, to wash and disinfect surfaces and also to make hair soft and shiny.

Ingrediants:

Method

1) Put the apple scraps to macerate in a glass container, completely covering them with water at room temperature and placing a weight on them so that they do not emerge. As you can see from the photo, I used a small cup.

4) A foam must form inside after a few days. Remove it and let it rest again.

5) The vinegar will be ready when it has acquired its classic perfume.
I didn't actually know how long it would take, so every day I tasted a little bit of it after cleaning it off the foam. Mine took about ten days.

6) Before bottling the vinegar you must filter it well with tightly woven gauze. Then bottle the vinegar in sterilized glass bottles.

  • 5 ml of apple cider vinegar
  • 2.5 of red powdered food coloring


Cover 2 non-stick 18 cm molds with a thin layer of butter. in diameter then flour them by removing the excess flour.


You can find buttermilk already ready in well-stocked supermarkets.
Doing it at home is very easy: in a bowl combine 220 ml of whole milk with 30 ml of lemon juice. Stir well and let it brew for 30 minutes.


In a large bowl sift the flour together with the cocoa and salt. This operation is very important because doing so,
it is made to incorporate some air to these ingredients and the cake, once cooked, will have a soft consistency.


Work the softened butter with a spoon, add the sugar until you get a creamy consistency.
If you use the planetary mixer you will have less effort.


Take a vanilla pod, with the tip of a knife cut it lengthwise, open it and with the back of the knife scrape the inside to extract all the seeds that you will transfer into the mixture of butter and sugar mixing well.


Add 1 egg at a time and continue to work until you get a homogeneous mixture.


Mix the buttermilk powdered food coloring and set aside. Only food grade powdered dye should be used and can be found in well-stocked stores.


In a bowl pour half of the flour, half of the butter and sugar mixture and mix. When the mixture is amalgamated, add half of the buttermilk. Repeat the process with the remaining halves.


Make a mix of baking soda and apple cider vinegar (you will see that it makes a kind of froth), pour it on the dough and mix quickly so as to mix it well with the red mixture that you will divide into the two molds.
Bake at 170 & deg for 35 minutes in a static oven. To be sure of cooking, insert a toothpick in the center of the two cakes: if it comes out clean, the cakes are ready.


Remove from the oven, let them cool in the mold for 10 minutes, level them with a sharp knife, keeping the caps.
Finally, unmold them and let them cool completely before proceeding with the filling and decoration.

Method
