Brazilian pudding

The condensed milk together with the whole milk, measured with the same box, is mixed in a bowl.

In a metallic form (I didn't have anything suitable, I used a rather large pan ...) put the caramelized sugar on low heat, stirring, not to burn and to become bitter. Rotate the pan so that the walls are also covered with caramel.

Add the above mixture over the melted sugar, then place the bowl in a large tray / pan where we put boiling water about halfway through the pudding.


Put it in the preheated oven at 200 degrees for about 50-60 minutes, and then check with the toothpick in the center if it is ready (if the toothpick comes out clean, it's ready; if it comes out with some crumbs on it, leave the pudding in the oven for a few minutes )

Leave to cool to room temperature and then refrigerate for at least 1-2 hours (serve cold).

Before serving, gently insert a knife with a thin blade around the perimeter of the mold to separate the pudding from the edges, and then turn it over in a flat plate. Place the plate on top of the form, with the bottom up, and then turn it over together.

"Menus" I thought they were dishes with recipes known from cookbooks, from discussions on the Culinary, etc. If there is something too special, please show me the recipes you want. Until then, I give a recipe for each category (which can also form a Sunday menu), from those that I think are less used.

7 eggs, 3 chicken or chicken livers or a turkey liver, 30 gr. fresh butter, a few tablespoons sour cream, 1/2 tablespoon fine breadcrumbs, chopped green parsley leaves, salt, pepper to taste.

1 carp of 1.5 kg. or 2-3 large macros that have about the same weight. You can also use a large or plastic crucian, novac.
2 large water onions (shallots), 750-1000gr. potatoes, 100g of oil, 1 glass of white wine, lemon or tomato slices, thyme, basil leaves, oregano, salt, ground pepper.

Put it on a good heat for about 35 minutes, then turn it carefully on the other side to brown it and mix the potatoes a little more. Sprinkle with the wine and leave for another 15 minutes.

BRAZILIAN CREAM.
It is made in the same way as caramelized vanilla cream.

¾ l. Milk, 2 sachets of vanilla sugar, 4 tablespoons sugar, 2 tablespoons concentrated black coffee, 150 gr. Chocolate, 6 eggs (or 4 whole eggs and 3 yolks) 3 tablespoons full of caster sugar for dressing form.

Boil the milk with the 4 tablespoons of sugar and vanilla sugar. When it boils, remove from the heat and add the coffee. Separately, melt the chocolate in a small saucepan with a tablespoon of water. When it has become a cream, dilute it with a little milk with coffee and pour in the rest of the milk. Then proceed as with caramelized cream.
Melt the sugar in a 2 l saucepan. Coat the form with burnt sugar on the walls. Then put it in the oven in a water bath (bain-marie.) For about 50 min. Care should be taken not to boil the water in the large saucepan. In this case, reduce the oven heat or put a little cold water in the water bowl. Check if it is ready with a clean stick or a narrow knife blade.
It is turned over after its complete cooling, detaching it with the wide blade of a knife from the pan. When the platter is overturned, the burnt sugar sauce will also form.

I have seen abroad that it is modern to serve this cream (like vanilla by the way) covered with slices of fruit or berries. I think that in this Brazilian Cream there are slices of ripe bananas and kiwis.
