Sift the flour into a bowl. Make a hole in the middle and sprinkle a teaspoon of sugar. Add the crushed fresh yeast and then pour 100 ml of warm milk. Stir a little in the pit and leave to rise.

The rest of the milk is heated together with the sugar, the vanilla sugar and at the end the grated lemon peel is added. After the yeast has risen, add salt, lightly beaten egg yolks, oil and yogurt. Stir from the middle to the outside, pouring a little of the warm milk. After all the flour has been incorporated, turn it over on the work table and knead. If necessary, add more milk or flour, depending on how the dough requires. Knead a soft and non-sticky dough which is then placed in the bowl and allowed to double in volume.

Meanwhile, prepare the filling. In a bowl put the cheese, egg, sugar and sour cream. Mix well then add the raisins at the end.

After the dough has risen, divide it into 3 parts. Spread each in a rectangular shape then cut into 6 squares, place in the middle of each square one lg of cheese composition and wrap like an envelope, bringing the opposite corners to the middle.

Place in a tray lined with baking paper and let rise for another 15 minutes. Grease with beaten egg and put in the preheated oven at 180 degrees for about 30-35 minutes or until nicely browned on top. Powder with powdered sugar.

• 450 g of cottage cheese

• 150-200 g of raisins

Put the raisins to soak in a bowl of warm water (enough to cover them) and leave them for 10 minutes.

Add the flour and powdered sugar (ground through a coffee grinder). Mix until a homogeneous composition is obtained. Taste, and if you want the cheeses to be sweeter, add more sugar.

Someone who tried this recipe suggested adding a mashed banana to the composition. The idea is good, because this way you can reduce the amount of sugar used (in this case, the banana must be cooked well, to give more sweetness to the dough).

If you notice that the dough is too soft, add a little more flour. It must be thick and easy to shape. Replace white flour with another type of flour, healthier (wholemeal, rye, oats, etc.).

Moisten your hands with a little water and form suitable large balls of dough. You can leave them round, or flatten them a little, to make them oval. Put the cheeses through the flour and bake them in a hot pan, with a little oil, over a good heat. Brown them on both sides a little.

It can be served hot, as such, or with honey, jam, yogurt or cream.
