Mushroom eggplant recipe by of 18-06-2007 [Updated on 20-06-2017]
The mushroom eggplant, or to be precise mulignane to fungitiello they are a typical Neapolitan side dish. Mushroom eggplants can be used as a side dish or to dress pasta, but they are also delicious in the middle of bread accompanied by a slice of provola: P
They are one of my favorite summer side dishes and with a good amount of vegetables to use, I made a part of them into a mushroom, others I used to make eggplant meatballs and a part I used to prepare the legendary eggplant parmigiana; )
How to make mushroom eggplants
Wash the aubergines, peel them and cut them into cubes.
Fry the aubergines in a pan with plenty of olive oil.
Lift the aubergines with a slotted spoon and set them aside.
Meanwhile wash the tomatoes and cut in half.
Fry a clove of garlic in the same pan in which you fried the aubergines.
Once the garlic is browned, remove it and add the tomatoes and basil. Season with salt and cook the sauce for about 10 minutes.
Then add the previously fried aubergines and cook for a few minutes.
Serve the mushroom-shaped aubergines adding some fresh basil.
